- 1 lbs Peeled + Deveined Shrimp
- 8 oz Smoked Sausage, sliced
- 2 Medium Zucchinis, sliced
- 2 Medium Summer Squash, sliced
- 1 Red Onion, sliced
- 2 Bell Peppers, diced
- 2 Tablespoons Cajun Seasoning
- 3 Tablespoons Olive Oil
- Salt and Pepper, to taste
- 1/2 Cup Parsley, chopped
- 1 Lemon, sliced into wedges
Preheat your oven to 425°F (220°C) or prepare your grill for direct cooking over medium-high heat.
Slice the zucchini, summer squash, red onion and peppers into equal size pieces. Slice the sausage into 1/2 inch slices.
In a large bowl, combine the peeled shrimp, sausage slices, zucchinis, summer squash, red onion, and bell peppers.
Sprinkle the Cajun seasoning evenly over the ingredients in the bowl. Drizzle the oil over the top. Season with salt and pepper to taste.
Toss the ingredients in the bowl until they are well coated with the Cajun seasoning and oil. If roasting in the oven: - Transfer the seasoned ingredients to a large oven-safe skillet or baking dish. - Spread them out in an even layer. - Place the skillet or baking dish in the oven and roast for approximately 20-25 minutes, or until the shrimp are cooked through and the vegetables are tender and slightly charred. If using a barbecue: - Place the seasoned ingredients in a grill basket or skewer them on skewers for easy grilling. - Place the grill basket or skewers directly on the preheated grill. - Cook for approximately 15-20 minutes, turning occasionally, until the shrimp and sausage are cooked through and the vegetables are tender and slightly charred.
Once cooked, remove the skillet or grill basket from the oven or grill and let it cool for a few minutes.
