1 lbs Peeled + Deveined Shrimp
8 oz Smoked Sausage, sliced
2 Medium Zucchinis, sliced
2 Medium Summer Squash, sliced
1 Red Onion, sliced
2 Bell Peppers, diced
2 Tablespoons Cajun Seasoning
3 Tablespoons Olive Oil
Salt and Pepper, to taste
1/2 Cup Parsley, chopped
1 Lemon, sliced into wedges
How To Make Cajun Shrimp, Sausage & Veggie BBQ Skillet
Preheat your oven to 425°F (220°C) or prepare your grill for direct cooking over medium-high heat.
Slice the zucchini, summer squash, red onion and peppers into equal size pieces. Slice the sausage into 1/2 inch slices.
In a large bowl, combine the peeled shrimp, sausage slices, zucchinis, summer squash, red onion, and bell peppers.
Sprinkle the Cajun seasoning evenly over the ingredients in the bowl. Drizzle the oil over the top. Season with salt and pepper to taste.
Toss the ingredients in the bowl until they are well coated with the Cajun seasoning and oil.
If roasting in the oven:
– Transfer the seasoned ingredients to a large oven-safe skillet or baking dish.
