Ingredients Needed
4 Cups Day-Old Cooked Rice*
10-20 Cloves Garlic, minced (add more or less to taste)
3 Tablespoons Butter or Vegetable Oil
2 Tablespoons Soy Sauce
1 Tablespoon Oyster Sauce
1/2 Teaspoon Salt
1/2 Teaspoon White Pepper
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Granulated Sugar
4-5 Green Onions, sliced (white parts for stir-frying, green parts for garnish)
2 Eggs (or Tofu For a Vegetarian Option), lightly beaten
How To Make Garlic Fried Rice
In a large pan or wok, heat the butter or vegetable oil over medium-high heat. Add the minced garlic and stir-fry until fragrant and golden brown. Be careful not to burn the garlic. Remove half of the garlic and set it aside for garnish later.
Push the remaining garlic to one side of the pan, creating a space to cook the eggs (or tofu). Pour the lightly beaten eggs (or crumbled tofu) into the empty space and scramble them until fully cooked. Mix the eggs (or tofu) with the garlic.
Add the day-old cooked rice to the pan and break up any clumps using a spatula. Stir-fry the rice with the garlic and eggs (or tofu) for a couple of minutes, allowing the flavours to meld together.
Drizzle soy sauce and oyster sauce over the rice. Sprinkle white pepper, salt, garlic powder, onion powder, and sugar evenly throughout the rice. Continue stir-frying until everything is well combined and the rice is heated through.
Add the sliced white parts of the green onions to the pan and continue to stir-fry for another minute or two, ensuring they are evenly distributed throughout the fried rice.
Taste the garlic fried rice and adjust seasoning if necessary, adding more soy sauce or salt to your preference.
Serve the garlic fried rice hot, garnished with the reserved golden-brown garlic and the green parts of the sliced green onions. Enjoy! 🙂
Notes + Tips for Garlic Fried Rice
- Day-Old Rice: Using day-old cooked rice ensures a firmer texture and prevents the fried rice from becoming mushy. If you don’t have day-old rice, spread freshly cooked rice on a baking sheet and let it cool before using. See the recipe notes for what kind of rice works best for fried rice.
- Customize Garlic: Adjust the amount of minced garlic to suit your taste preferences. If you’re a garlic lover, feel free to add more cloves for an extra garlicky flavour.
- Vegan Option: Swap eggs with crumbled tofu for a delightful vegan version. Ensure the tofu is well-drained and seasoned before adding it to the dish. I like to use medium firm tofu to give it a similar “eggy” texture.
- Ingredient Substitutions: Get creative and customize the recipe with your favourite vegetables, such as peas, carrots, or bell peppers. You can also try different protein options like shrimp, chicken, or beef for a variety of flavours.
