It is out of the ordinary, I know! But believe when I say this grated egg toast is an interesting, different and tasty toast! Make this for lunch, a snack or heck even dinner! It is definitely unusual to grate a boil eg over toast but the texture is phenomenal! I topped mine with pickled onions and sriracha but the topping combinations are endless. This grated egg toast will only take you about 10 minutes to make and I am sure you will enjoy it.
The Ingredients You Will Need…
2 Eggs
2 Slices Bread (of your choice)
1 Avocado
1/4 Salt, pepper, garlic powder, onion powder, oregano, each
1 Tsp Lemon Juice
1 Tbs Feta
1-2 Tbs Pickled Onions
1 Tbs Sriracha (optional)
Grated Egg
This toast calls for 2 boiled eggs. The way that I prepare boiled eggs is place them in a pot and bring it to a boil, allow the eggs to boil for 12 minutes. One 12 minutes is up place them in an ice bath and allow them to cool. Once the eggs are cooled (and your toast is prepared) use a box grater to grate the hard boiled egg over the toast. And ta-da!! Super easy, super yummy. Then just add your favourite toppings to the toast and enjoy! 🙂
The Toppings
For this grated egg toast, I toasted the bread and added avocado and feta at the bottom of the toast, the the grated egg and on top I added pickled onions and siracha. Other topping ideas that would work well with this toast:
Prosciutto
Roasted tomatoes
Hot sauce
Hummus
Burrata
Mozzarella
Salsa
Capers
Green onion
Cilantro
Parsley
Smoked salmon
The list could go on forever! Add whatever sounds good for you or whatever you have at home! 🙂
Method:
Step 1:
Slice your bread, spread mayo on both sides and toast in a pan until golden brown.
Step 2:
Boil the eggs for 12 minutes and then place in an ice bath to cool, then peel the eggs.
Step 3:
Make the guacamole and spread it on the toast and top with feta.
Step 4:
Grate the eggs over top of the toast and add your favourite toppings. Enjoy! 🙂
