This One Pot Broccoli Cheddar Mac u0026amp; Cheese comes together in 30 minutes and will remind you of childhood mac u0026amp; cheese but a little healthier with added broccoli and much more scrumptious. This Mac u0026amp; Cheese uses simple household ingredients and is super cheesy, creamy, and the perfect easy dinner the whole family will love!
Servings: 4 servings
- 1 lbs Short Grain Pasta
- 4 Cups Water
- 2 Cups Broccoli Florets, chopped
- 3/4 Cup Milk of Choice
- 4 oz Cream Cheese, softened
- 1 Tablespoon Dijon Mustard
- 2 Cups Sharp Cheddar Cheese, shredded
- 1 Cup Mozzarella Cheese, shredded
- 1/2 Teaspoon: Salt, Black Pepper, Onion Powder, Garlic Powder, Chicken Bouillon Powder, Paprika and Cayenne, each
- 2 Tablespoons Butter
- Cracked Black Pepper, to garnish
Chop up broccoli florets into bite size pieces and set aside for now.
In a medium-large pot add 4 cups of water and a pinch of salt and bring it to a boil. Once boiling, add in pasta and cook for about 4 minutes on medium heat.
After 4 minutes, add in broccoli florets and continue to cook for about 2 minutes. At this point about 80% of the water should be absorbed into the pasta and the pasta should be almost completely cooked.
Add in milk, cream cheese and dijon mustard. Continue to stir that in until the cream cheese is just melted.
Next, add both of the shredded cheeses, spices and butter. If the pasta looks a but thick, add in about 1/2 cup of water to reach desired consistency. Stir all the ingredients together and once the cheese is melted, shut the heat off and set to the side to simmer for 1-2 minutes.
Serve immediately with a little extra shredded cheese on top and some freshly cracked black pepper. Enjoy! 🙂
This Broccoli Cheddar Mac u0026amp; Cheese will last up to 4 days stored in the fridge. To reheat, microwave on medium with a dash of water and covered so it steams or heat on the stovetop with a dash of water on medium-low until just warmed. Depending on the pasta shape you use you may have to adjust the amount of water added. Start by adding 4 cups at the beginning like normal, if you see that all of the water is absorbed and the pasta is too thick by the end of cooking it, add in 1/2 cup of water at a time until you reach your desired consistency.
