Servings: 14 cookie dough balls
- 1 Cup Chickpeas, cooked and drained
- 1/4 Cup Natural Almond Butter (or any other nut butter of your choice)
- 3 Tablespoons Maple Syrup
- 1 Teaspoon Vanilla Extract
- 1/4 Cup Plant-Based Protein Powder (such as pea protein or hemp protein)
- 1/4 Cup Oat Flour (you can make this by blending rolled oats until fine)
- 1/4 Teaspoon Salt
- 1/4 Cup Dairy-Free Chocolate Chips
In a food processor or blender, combine the chickpeas, almond butter, maple syrup, vanilla extract, protein powder, oat flour and salt. Blend until smooth and well combined.
Transfer the dough to a mixing bowl and fold in the dairy-free chocolate chips.
Once the chocolate chips are evenly distributed, taste the dough and adjust the sweetness if needed by adding more maple syrup or agave nectar.
Cover the bowl and refrigerate the dough for at least 30 minutes to allow it to firm up.
Once chilled, remove the dough from the refrigerator and use a cookie scoop or tablespoon to portion out the dough into bite-sized pieces. Roll each portion into a ball and place them on a lined baking sheet or plate. Or you can skip this step and just eat the cookie dough with a spoon.
