A quick and easy lunch option! These tostadas are light, crunchy, creamy from the beans and tasty from the veggies. Smeared with beans on a crispy tostada, topped with creamy guacamole and topped with juicy tomatoes and pungent onions. Garnish with lime juice and hot sauce!

  • Easy 15-Minute Lunch idea! This lunch comes together in 15 minutes or less. The only real work this lunch takes is sautéing the onions and garlic for the refried beans. 
  • You can meal prep the refried beans! You can make a batch of these beans and have them ready for the rest of the week to make a quick and easy lunch.
  • You can easily make these tostadas plant based. Make sure the refried beans you use do not include lard and just the beans/spice, then this lunch is easily made plant based.

Ingredients Needed

  • 8 Tostadas

  • 546 mL Can Refried Pinto Beans

  • 1 Medium Yellow Onion, diced

  • 4 Cloves Garlic, minced

  • 1 Tablespoon Olive Oil

  • *Optional: 1 Tablespoon Taco Seasoning

  • 1 Medium Red Onion, finely diced

  • 2 Tomatoes, finely diced

    Guacamole

  • 2 Medium-Large Ripe Avocados

  • 1-2 Limes, juiced

  • 1/4 Teaspoon: salt, black pepper, onion powder, garlic powder, oregano, each

How To Make Refried Beans Tostadas

Start by dicing the yellow onion, mincing the garlic cloves and dicing the red onion and tomatoes.

In a small sauce pan add the oil and sauté the onions on medium heat. After a few minutes they will start to brown, at this point add the garlic cloves and continue to sauté. You want the onions and garlic to be a deep golden brown (but not burned). Add the refried beans and heat them until a light bubble appears. Take the beans off the heat and set aside for now.

In a bowl add avocados, the juice of 1-2 limes over top and the spices. Use a fork to mash down the avocados until it is nice and creamy.

Now time to assemble: start by spreading a single layer of refried beans on the tostada. Top with a spoon or two of guacamole. Garnish with tomatoes and red onion. Optionally: add lime juice and hot sauce. Enjoy! 🙂

Notes + Tips for Refried Beans Tostadas

  • Use black beans, pinto beans or kidney beans as your refried beans. There are different brands of refried beans out there, juts pick one that suits your needs and that you enjoy.
  • Make sure to really brown the onions and garlic until a deep golden colour appears. You don’t want to burn the onions and garlic but for them to develop a deep golden brown colour appears; then you know you are ready to add the can of refried beans!
  • Add whatever toppings you like! I used guacamole, tomatoes, onions, lime juice and hot sauce but there are so many other great options you could add. Try using corn or hot pickled peppers on top, the options are endless!!
