Ingredients Needed

  • 16 oz Rice Noodles

  • 2/3 Cups Smooth Peanut Butter

  • 1/4 Cup Soy Sauce

  • 2 Limes, juiced

  • 2 Tablespoons Honey

  • 2 Tablespoons Chilli Paste or Chilli Oil

  • 4 Minced Red Thai Chilles, optional*

  • 3 Cloves Garlic, minced

  • 1 Tablespoon Ginger, grated

  • 1 Tablespoon Sesame Oil

  • Green Onion, to garnish

  • 1/2 Cup Crushed Peanuts, to garnish

How To Make High Protein Dill Pickle Tuna Melt

Bring a large pot of water to a boil and cook the rice noodles until al dente. Do not over cook the noodles and make sure to save a few cups of the pasta water to use to thin the peanut sauce.

While the noodles are boiling, make the chilli peanut sauce. Add sesame oil to a pan on medium heat then add the garlic, ginger and chilles and sauté for 1-2 minutes until fragrant.

Next, to the pan add the peanut butter, soy sauce, honey, lime juice, and chilli paste or oil. Use a whisk to blend all the ingredients together on medium low heat until the sauce is cohesive.

The sauce will be quite thick at this time. Add the cooked al dente rice noodles, followed by 1/3 at a time of pasta water and keep stirring on low heat. I ended up adding a little more than 1 cup of pasta water but keep adding pasta water a little bit at a time until the noodles are at your desired consistency.

Garnish the noodles with green onion and crushed peanuts on top. Enjoy! 🙂

Notes + Tips for Spicy Chilli Peanut Noodles

  • Adjust the spice level to your liking! These noodles have some serious heat so adjust the amount of chilli peppers you add. I added 6 Red Thai Chillies but would recommend adding more like 1-2 for a moderate amount of heat. 
  • DONT DRAIN YOUR PASTA WATER! The pasta water that you use to cook your rice noodles will be used to thin out the peanut sauce so make sure to save at least 2 cups. I used about 1 cup of pasta water until I reached a desired sauce consistency. 
  • Eat these noodles right away! Unfortunately, rice noodles dont keep well the next day. Rice noodles tend to clump together so I recommend eating the noodles eating them right away and making an exact portion that you/others will eat.

Notes

  • These noodles are best eaten right away. Rice noodles do not keep well for the next day because they tend to clump together. To reheat the Spicy Chilli Peanut Noodles, add a little bit of water in a bowl with you noodles and microwave on medium until heated.
  • You may opt out of adding Red Thai Chilles if you do not like spice. If you want just a small kick add about 1-2 Red Thai Chillies. I added 6 Red Thai Chillies to mine and it had a kick.
