Spicy, salty, nutty, umami and soooo tasty these Spicy Chilli Peanut Noodles are addicting and such a yummy easy dinner option. Naturally plant based, these Peanut Noodles are packed with flavour and come together in 30 minutes or less.
Servings: 4 servings
- 16 oz Rice Noodles
- 2/3 Cups Smooth Peanut Butter
- 1/4 Cup Soy Sauce
- 2 Limes, juiced
- 2 Tablespoons Honey
- 2 Tablespoons Chilli Paste or Chilli Oil
- 4 Minced Red Thai Chilles, optional*
- 3 Cloves Garlic, minced
- 1 Tablespoon Ginger, grated
- 1 Tablespoon Sesame Oil
- Green Onion, to garnish
- 1/2 Cup Crushed Peanuts, to garnish
Bring a large pot of water to a boil and cook the rice noodles until al dente. Do not over cook the noodles and make sure to save a few cups of the pasta water to use to thin the peanut sauce.
While the noodles are boiling, make the chilli peanut sauce. Add sesame oil to a pan on medium heat then add the garlic, ginger and chilles and sauté for 1-2 minutes until fragrant.
Next, to the pan add the peanut butter, soy sauce, honey, lime juice, and chilli paste or oil. Use a whisk to blend all the ingredients together on medium low heat until the sauce is cohesive.
The sauce will be quite thick at this time. Add the cooked al dente rice noodles, followed by 1/3 at a time of pasta water and keep stirring on low heat. I ended up adding a little more than 1 cup of pasta water but keep adding pasta water a little bit at a time until the noodles are at your desired consistency.
Garnish the noodles with green onion and crushed peanuts on top. Enjoy! 🙂
These noodles are best eaten right away. Rice noodles do not keep well for the next day because they tend to clump together. To reheat the Spicy Chilli Peanut Noodles, add a little bit of water in a bowl with you noodles and microwave on medium until heated. You may opt out of adding Red Thai Chilles if you do not like spice. If you want just a small kick add about 1-2 Red Thai Chillies. I added 6 Red Thai Chillies to mine and it had a kick.
