First, prepare the brownies according to the package instructions. Every package is different, but most brownie mixes call for eggs, oil and water or something of that sort. Once the brownies are baked, allow them to cool for at least 30 minutes.
Once the brownies are cooled, add them to a mixing bowl with 8oz of cream cheese. Use clean hands to incorporate the cream cheese and brownie together. You know the truffle dough is mixed well when the dough resembles play-dough texture.
Form the brownie mixture into 1-2 tablespoon balls by rolling the truffle dough in between both of your palms. Set aside on a baking tray lined with parchment paper for now.
Melt milk chocolate chips with 1 tablespoon of coconut oil, repeat this step with the candy melts as well. You can use white candy melts, pink, red or whatever you have on hand or prefer. Or you could just use melted chocolate chips. The coconut oil will help melt the chocolate. Microwave the chocolate chips in 30 second intervals until the chocolate is completely melted, and u0022runnyu0022.
Dip each ball into the melted chocolate (and/or coloured candy melts). Use a fork to allow the extra chocolate to drip off and then, place the balls on a baking tray for now.
While the chocolate is still wet on the truffle, sprinkle each ball with sprinkles. Get creative and decorate each truffle to your own liking.
Once each truffle has been dipped in chocolate and decorated with sprinkles, place the tray of truffles in the fridge until they are set (30 minutes). Once the chocolate is set and harden they are ready to eat. These truffles will last up to 6 days in the fridge in an airtight container.
