Carrot Cake Oat Bake

This carrot cake oat bake is fluffy and taste exactly like traditional carrot cake- but in breakfast form! With crunchy walnuts and the warm spiced flavour from the cinnamon and ginger, there is so much to love about this carrot cake oat bake. You can even triple or quadruple this recipe and make it in a baking pan and have it for a few days (if it last that long LOL). This oat bake is gluten free, refined sugar free and if you choose to use vegan yogurt then also dairy free! I topped my carrot cake oats with greek yogurt to give it that delectable ā€œcream cheeseā€ feel, but a healthy version of it.Ā 

The Ingredients You Will Needā€¦

  • 1/2 Cup Oats
  • 3/4 Cup Milk (of choice)
  • 2 Tbs Apple Sauce
  • 1 Tbs Chia Seeds
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 Tsp Vanilla Extract
  • 1/3 Cup Carrots, Shredded
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Ground Ginger
  • 1/4 Cup Maple Syrup
  • 4 Dates, chopped
  • 2 Tbs Walnuts, chopped
  • 2 Tbs Greek Yogurt (Plain or Vanilla)
  • 1 Tbs Cooking Spray

Double, Triple, Quadruple This RecipeĀ 

This recipe makes 2 moderate portions. I used 2 greased oven safe ramekins to bake them in. If you want you can double, triple or quadruple this recipe. Just multiple each ingredient by 1, 2, or 3 and then pour the carrot cake oat bake into a greased baking dish. A pyrex would work great or even iv you wanted to bake them in cupcake tins and make them into carrot cake ā€œmuffinsā€ that would work too.Ā 

If you wanted to make carrot cake ā€œmuffinsā€ I would suggest quadrupling the recipe, this should make about 12. Bake for about 30-40 minutes or until a toothpick comes out clean.Ā 

Method

Step 1:

Add all ingredients to a blender and blend until smooth.

Step 2:

Add the mixture to oven safe ramekins and mix in shredded carrots.

Step 3:

Top the ramekins with dates and walnuts and bake until desired consistency.Ā 

Step 4:

Top with greek yogurt, shredded carrots and cinnamon. Enjoy! šŸ™‚

Ingredients:

  • 1/2 Cup Oats

Instructions:

  • In a blender add oats, milk, apple sauce, chia seeds, baking powder, salt, vanilla extract, carrots, cinnamon, ginger, and maple syrup.
    1/2 Cup Oats, 3/4 Cup Milk (of choice), 2 Tbs Apple Sauce, 1 Tbs Chia Seeds, 1 Tsp Baking Powder, 1/2 Tsp Salt, 1 Tsp Vanilla Extract, 1/3 Cup Carrots,, 1/2 Tsp Cinnamon, 1/2 Tsp Ground Ginger, 1/4 Cup Maple Syrup
  • Spray the ramekins with cooking spray. Pour the batter into the ramekins, it should fill 2 ramekins about 1/2-3/4 full. Top with dates and walnuts and bake in a preheated 370 degree oven for 30 minutes.*

  • Allow the oat bake to cool for about 10 minutes then top with greek yogurt. Enjoy šŸ™‚
    2 Tbs Greek Yogurt (Plain or Vanilla)

Notes

*Depending on how cooked you like your oats will indicate the cooking time. If you like it more cakey bake for longer than 30 minutes and if you like it more runny then take it out before 30 minutes. Just use a knife to poke the middle and check the consistency.Ā
