Rosemary Parmesan Cheese Stuffed Buns

These cheese stuffed buns are so good and comforting! They make a perfect holiday appetizer or side for your holiday meals. The garlic butter that gets brushed on top after baking makes all the difference! They are gooey from the cheese and savoury, let’s just say they are addicting!!

Bread Flour or All Purpose Flour?

I recommend using bread flour for this cheesy buns. Bread flour will make the bread extra fluffy and give it a lighter texture. However, all purpose flour will work just fine if that is what you have.

Other Cheeses:

For this recipe I used mostly mozzarella cheese and some Parmesan. Mozzarella is a low-moisture cheese which makes it stretchy and gooey when melted. You could always use other cheeses you have on hand. Some other cheese ideas:

  • Cheddar
  • Gruyère
  • Brie
  • Havarti
  • Gouda

Cast Iron

Using a cast iron to bake these buns is a very easy solution. You don’t have to use a cast iron you can use any other baking dish such as a pyrex, loaf pan or even a baking tray in a pinch. 

The Ingredients You Will Need…

Yeast Mixture (Sponge)

  • 2 Tbs Dry Active Yeast
  • 1 Cup Warm Water
  • 1 Cup Bread or All Purpose Flour

The Rest of The Bread Mixture

  • 1 1/2 Cups Bread or All Purpose Flour
  • 2 Tsp Salt
  • 1 1/2 Tbs Dried Rosemary
  • 1 Egg, Beaten
  • 1 Tbs Olive Oil

Cheeses

  • 1/2 Cup Parmesan Cheese, Grated
  • 1 Cup Mozzarella Cheese, Shredded

Garlic Butter

  • 1/3 Cup Unsalted Butter, Melted
  • 4 Cloves Garlic, Minced
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1 Tbs Parsley, Minced
  • 2 Tbs Parmesan Cheese, Grated

Method:

Step 1:

Mix the yeast mixture together allow it to rest for 10 minutes. Mix the yeast mixture with the flour to form a dough. 

Step 2:

Stuff each dough ball with the cheese and place into the cast iron pan and allow to rest for an additional 10 minutes.

Step 1:

Bake the buns until golden and brush with the garlic butter. Enjoy! 🙂

  • Stand Mixer with Kneading Attachment Optional
  • Cast Iron Skillet, Pyrex or Other Baking Dish
Servings: 10 Buns

Ingredients:

  • 1 Cup Warm Water
  • 1 Cup Bread or All Purpose Flour

  • 1 1/2 Cups Bread or All Purpose Flour
  • 2 Tsp Salt
  • 1 1/2 Tbs Dried Rosemary
  • 1 Egg, Beaten
  • 1 Tbs Olive Oil

Cheeses

  • 1/2 Cup Parmesan Cheese, Grated
  • 1 Cup Mozzarella Cheese, Shredded

Garlic Butter

  • 1/3 Cup Unsalted Butter, Melted
  • 4 Cloves Garlic, Minced
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1 Tbs Parsley, Minced
  • 2 Tbs Parmesan Cheese, Grated

Instructions:

  • In a bowl mix together dry active yeast, warm water, and flour. Stir together and then set aside for 10 minutes.
    2 Tbs Dry Active Yeast, 1 Cup Warm Water, 1 Cup Bread or All Purpose Flour
  • After the 10 minutes, in another bowl add flour, salt and rosemary. Pour the yeast mixture over top and stir well. The dough will come together and look shaggy and dry. At this point if you have a stand mixer with a kneading attachment, knead for 10 minutes or you can knead the dough for 10 minutes by hand. Do not add any extra flour, as you knead the dough it will become soft.
    1 1/2 Cups Bread or All Purpose Flour, 2 Tsp Salt, 1 1/2 Tbs Dried Rosemary
  • After kneading, divide the dough into 10 equal balls. Take each dough ball and flatten into a small pancake. Add the about 1-2 Tbs of the shredded cheeses (Parmesan and Mozzarella) in the centre then close the dough ball back up and roll it back into a ball.
    1/2 Cup Parmesan Cheese,, 1 Cup Mozzarella Cheese,
  • Brush olive oil in your cast iron or baking dish. Place the dough balls in your cast iron or baking dish and allow to rest for an additional 10 minutes. Beat 1 egg and brush the tops of the buns.
    1 Egg,, 1 Tbs Olive Oil
  • In a bowl mix together melted butter, garlic, onion powder, garlic powder, parsley, and Parmesan cheese.
    1/3 Cup Unsalted Butter,, 4 Cloves Garlic,, 1/2 Tsp Garlic Powder, 1/2 Tsp Onion Powder, 1 Tbs Parsley,, 2 Tbs Parmesan Cheese,
  • After 10 minutes, place in a preheated oven of 365 degrees for 25-30 minutes or until the bread is golden brown. Brush immediately with the garlic butter mixture. Optionally, you can garnish with more parsley and parmesan cheese. Serve warm and enjoy!
