MY INSPIRATION BEHIND THIS RECIPE

Roasted garlic elevated any dish that its added to! I love mashed potatoes and of course love adding garlic to my potatoes. Typically, I would just add raw garlic while the potatoes are boiling then mash it all together. Doing it this way is always good, but roasting your garlic takes it to the next level. The roasted garlic adds a deep, nutty and almost sweet flavour to the creamy potatoes. I added heavy cream and butter to these mashed potatoes to make them super creamy. The best side dish!!

On a piece of tinfoil, place the 2 heads of garlic with the tops cut off. Drizzle olive oil over the heads of garlic and sprinkle with salt. Fold the tinfoil over to create a sealed pouch. Roast in the preheated oven for about 20 minutes or until the garlic is soft and golden.

Meanwhile, peel the potatoes and place them in a large pot. Cover them with water and add a generous pinch of salt. Bring the potatoes to a boil and cook until they are fork-tender (about 15-20 minutes). Drain the potatoes and return them to the pot.

In a small saucepan, combine the heavy cream, butter, onion powder, garlic powder, and a pinch of salt. Heat the mixture over low heat until it reaches a light simmer and the butter is completely melted.

Pour the creamy mixture over the cooked potatoes. Squeeze the roasted garlic into the pot as well. Use a hand mixer, potato masher, fine mesh strainer or ricer to mash the potatoes until they reach your desired creamy consistency. Adjust the seasoning with salt to taste (approximately 1 tablespoon for most).
