  • Tin Foil

Ingredients
  

Roasted Garlic

  • 2 Heads Garlic
  • 1 Tbs Olive Oil
  • 1 Tsp Salt

Mashed Potatoes

  • 3 Pounds Russet or Yukon Gold Potatoes peeled and cubed
  • 3/4 Cup Heavy Cream
  • 1/2 Cup Butter
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • Salt to taste
  • Grated Parmesan, Chives, Parsley, or Roasted Garlic (optional) to garnish

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • On a piece of tinfoil, place the 2 heads of garlic with the tops cut off. Drizzle olive oil over the heads of garlic and sprinkle with salt. Fold the tinfoil over to create a sealed pouch. Roast in the preheated oven for about 20 minutes or until the garlic is soft and golden.
    2 Heads Garlic, 1 Tbs Olive Oil, 1 Tsp Salt
  • Meanwhile, peel the potatoes and place them in a large pot. Cover them with water and add a generous pinch of salt. Bring the potatoes to a boil and cook until they are fork-tender (about 15-20 minutes). Drain the potatoes and return them to the pot.
    3 Pounds Russet or Yukon Gold Potatoes
  • In a small saucepan, combine the heavy cream, butter, onion powder, garlic powder, and a pinch of salt. Heat the mixture over low heat until it reaches a light simmer and the butter is completely melted.
    3/4 Cup Heavy Cream, 1/2 Cup Butter, 1 Tsp Garlic Powder, 1 Tsp Onion Powder, Salt
  • Pour the creamy mixture over the cooked potatoes. Squeeze the roasted garlic into the pot as well. Use a hand mixer, potato masher, fine mesh strainer or ricer to mash the potatoes until they reach your desired creamy consistency. Adjust the seasoning with salt to taste (approximately 1 tablespoon for most).
  • Garnish with chopped parsley and, if desired, top with grated Parmesan, chives, or roasted garlic for extra flavour. Enjoy! :)
