Mini Eggs Blondies

I love Easter! I don’t know about you but it reminds me of spring, flowers, warm weather and of course MINI EGGS. If you’re a fan of mini eggs you definitely need to try these mini egg blondies. It is basically a cookie bar but instead of using plain old chocolate chips I have swapped them for these decadent mini eggs and white chocolate. These blondies are soft and chewy and are everything you love about a basic cookie but Easter themed! This is definitely a kid friendly, brunch friendly, easter get-together- friendly recipe so you need to give it a try!

The Mini Eggs & White Chocolate 

The main star of this recipe is obviously the Cadbury mini eggs. I highly recomend that you use them for this recipe, however, if you can’t find mini eggs or prefer regular chocolate chips that will work just fine-this recipe is just a basic cookie recipe but in cookie bar forms. 

The Baking Dish

For this recipe I used a 15″x9.5″ baking pyrex dish. You can use a dish of similar size or if you are feeling really fancy you can always shape the dough into 2 tablespoon cookie balls and bake. I like using the baking dish method because it is easier and also you can cut it into uniform squares at the end.

The Ingredients you will need:

  • 3/4 Cup unsalted butter, softened
  • 1 Cup brown sugar
  • 1/2 Cup white sugar
  • 2 eggs
  • 1 Tbs vanilla extract
  • 2 Cups all purpose flour
  • 1 Tsp baking powder
  • 1/2 Tsp salt
  • 1 1/2 Cup mini eggs, chopped
  • 1/2 Cup white chocolate chips

Method:

Step 1:

Start by creaming butter and sugars together. Once incorporated, add eggs and vanilla and whisk until smooth. 

Step 2:

Add dry ingredients as well as mini eggs and white chocolate chips. Mix well. 

Step 3:

Add mini egg cookie dough to a baking dish and ad more mini egg pieces on top if you like. 

Step 4:

Allow the mini egg blondies to cool slightly and enjoy! 🙂

it sure feels like Easter when you see mini eggs in the stores. These mini egg blondies are simple and scrumptious and they come together in one bowl. Super soft and chewy these will put a smile on your face for sure! 🙂
Servings: 12 Bars

Ingredients:

  • 3/4 Cup Unsalted Butter, softened
  • 1 Cup Light Brown Sugar
  • 1/2 Cup White Sugar
  • 2 Eggs
  • 1 Tbs Vanilla Extract
  • 2 Cups All Purpose Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 1/2 Cup Mini Eggs chopped
  • 1/2 Cup White Chocolate Chips

Instructions:

  • Start by creaming butter and sugars together in a bowl. Once incorporated, add eggs and vanilla, whisk until you have a smooth consistency.
    3/4 Cup Unsalted Butter,, 1 Cup Light Brown Sugar, 1/2 Cup White Sugar, 2 Eggs, 1 Tbs Vanilla Extract
  • Add flour, baking powder, and salt into your butter egg mixture and fold together until combined.
    1 Tsp Baking Powder, 1/2 Tsp Salt, 2 Cups All Purpose Flour
  • Add mini eggs and white chocolate chips, gently mix together into the dough.*
    1 1/2 Cup Mini Eggs, 1/2 Cup White Chocolate Chips
  • In a greased pyrex baking dish, add your cookie dough and use your fingers to spread out evenly while pushing dough down to make a smooth layer.
  • Bake in preheated oven at 325 for 40 minutes or until you see the middle has set and edges are golden.
  • Allow to cool for at least 10 minutes, and enjoy! 🙂

* You can reserve a handful of mini eggs to add on top if you desire but it is not necessary.
