These taquitos are easy to put together and are baked in the oven to this recipe even easier! These taquitos are made with white tortillas, Monterey Jack cheese and seasoned chilli lime chicken. The are crispy on the outside and cheesy and tasty on the inside. To make these taquitos even better they are served with cilantro lime dip that is tangy and creamy making it the perfect accompaniment to these warm and delicious taquitos. Serve these for a party appetizer such as the Super Bowl or as a dinner.

Ingredients Needed
4 Chicken Thighs
2 Chicken Breasts
1 Tsp Salt
1 Tsp Black Pepper
1 Tsp Chilli Powder
1 Tsp Cumin
1 Tsp Smoked Paprika
1 Garlic Powder
1 Onion Powder
1 Tsp Oregano
1 Tsp Cayenne
1 Lime, zested
2 Limes, juiced
1/4 Cup Neutral Oil
20, 10″ White Flour Tortilla Wraps
1/4 Cup Neutral Oil
400g Monterey Jack, shredded
Cilantro, to garnish
Limes, to garnish
Cilantro Yogurt Dip
1 Cup Plain Greek Yogurt
1 Handful Cilantro
3 Garlic Cloves
1/2 Lime, zested
1 Lime, juiced
1 Tsp Oil
1 Tsp Honey
Pinch of Salt & Black Pepper
How To Make This Recipe
Start by mixing together all the spices to coat the chicken. Sprinkle the seasoning on the chicken and massage it in.
In a heavy bottom skilled such as a cast iron skillet, add 1/4 cup oil on medium heat. Once the oil is shimmering, add the chicken skin side down. Cook the chicken until the internal temperature reaches 165 F. Flip the chicken half way through cooking, one flipped add lime zest and lime juice. Once the chicken is cooked remove from the skillet and set aside.
Peel and de-bone the chicken and chop into small pieces. At this point, preheat the oven to 380 degrees F. Take a tortilla and 1-2 tablespoons of the chopped chicken and 1-2 tablespoons of Monterey Jack shredded cheese. Roll the tortilla up tightly and place seam side down. Repeat with the rest of the tortilla wraps.
Brush oil on the bottom of 2 baking trays, place the taquitos on the baking trays seam side down, leaving a little bit of space in between each taquito. Use a brush to brush oil on top and sides of each taquito. Place in the oven for about 25 minutes, flipping halfway through.
While the taquitos are cooking, make the cilantro yogurt dip. Add yogurt, garlic cloves, cilantro, lime zest, lime juice, honey, oil and salt and pepper to a blender. Blend until smooth, pour the dip into a serving bowl.
Place the taquitos on a serving plate with the cilantro yogurt dip on the side. Garnish with lime wedges and cilantro. Enjoy! 🙂
Notes + Tips
- For the chicken you can use boneless and skinless chicken if that is what you have and do not want to de-bone the chicken. Also, you can use all dark meat or all white meat, depending on your preference. I used a combination of both to maintain juiciness and tastiness,
- I made my own taco seasoning to season the chicken but you can just use store bought taco seasoning for connivence. Add 1 1/2-2 tablespoons of taco seasoning to coat the chicken. Make sure to still add lime zest and juice halfway through cooking.
- I used Monterey Jack cheese but other cheeses can work too for these taquitos such as: mozzarella, cheddar, marble, pepper jack etc…
