How To Make High Protein Dill Pickle Tuna Melt

Preheat oven to 350 degrees F.

In a mixing bowl using a hand mixer (or stand mixer) cream butter and both brown and granulated sugar together until smooth.

Once the butter and sugars are creamed together, add the egg and vanilla extract. Cream that until the egg is incorporated in fully.

Add in flour, rolled oats, baking soda and salt, mix until JUST combined- do not over mix.

Next, add in the crushed mini eggs and mini chocolate chips mix the chocolate into the dough until JUST combined.

Now it is time to roll the cookie dough into balls. Create balls that are about 1-2 tablespoons of the cookie dough and roll between your palms until a sphere is formed. Place each dough ball on a parchment lined baking sheet, leaving at least an inch space between them.

Optionally, you can add a few extra mini eggs on top of the cookie ball before baking. Place the baking sheets in the oven and bake for 13-15 minutes until golden around the edges but not overcooked in the centre.

Cool the cookies for at least 10 minutes and enjoy! 🙂

Notes + Tips for Cadbury Mini Egg Cookies

  • Add extra mini eggs on top of the cookie dough balls. You can add a few extra mini eggs on top of the cookie dough balls before baking. Once the cookie are done you will visibly see the mini eggs sitting on top, making them look so cute!
  • Do not over bake these cookies! Bake these cookies for about 13-15 minutes. You know the cookies are done when the edges are light golden brown and the middle still looks a little bit raw. It’s better to underbake these cookies than to over-bake them.
  • Store Cadbury Mini Egg Cookies in an airtight container. To keep these cookies soft and chewy keep the cookies in a room temperature air-tight container. If you place these cookies in the fridge they will go hard.

Why Use Rolled Oats in these cookies?

  • Rolled oats add a chewy texture to these cookies. Rolled oats help make cookies ooey, gooey, chewy, and delicious all throughout the cookies. I recommend adding rolled oats to these Cadbury Mini Egg Cookies for textural variety.
