Cadbury Mini Egg Cookies

Festive Easter Cadbury Mini Egg cookies are crispy around the edges, and soft and chewy in the middle, just how the perfect chocolate chip cookie should be! These cookies are also the easiest cookies to make they come together in under 30 minutes!

Ingredients
  

  • 1 Cup Cadbury Mini Eggs, crushed + more for topping, optional*
  • 1 Cup Semi-Sweet Mini Chocolate Chips
  • 1 Cup Salted Butter
  • 1 Cup Brown Sugar
  • 1/2 Cup Granulated Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 2 Cups All Purpose Flour
  • 1/2 Cup Rolled Oats
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a mixing bowl using a hand mixer (or stand mixer) cream butter and both brown and granulated sugar together until smooth.
  • Once the butter and sugars are creamed together, add the egg and vanilla extract. Cream that until the egg is incorporated in fully.
  • Add in flour, rolled oats, baking soda and salt, mix until JUST combined- do not over mix.
  • Next, add in the crushed mini eggs and mini chocolate chips mix the chocolate into the dough until JUST combined.
  • Now it is time to roll the cookie dough into balls. Create balls that are about 1-2 tablespoons of the cookie dough and roll between your palms until a sphere is formed. Place each dough ball on a parchment lined baking sheet, leaving at least an inch space between them.
  • Optionally, you can add a few extra mini eggs on top of the cookie ball before baking. Place the baking sheets in the oven and bake for 13-15 minutes until golden around the edges but not overcooked in the centre.
  • Cool the cookies for at least 10 minutes and enjoy! :)
