Chorizo Queso Dip

This chorizo queso dip is so easy to make because it comes together in one cast iron skillet. This dip is creamy, tasty, and a little spicy. With fresh jalepenos, onions, tomatoes, chorizo sausage and LOTS of cheese this dip has everything you will love. Serve this dip with tortilla chips and I promise everyone will love this dip! 

The Ingredients You Will Need…

  • 4 Fresh Chorizo Sausages
  • 1 Tbs Olive Oil
  • 1 Cup Onion, diced
  • 4 Cloves Garlic, minced
  • 1 Can Chopped Green Chillies (127ml)
  • 1 Can Diced Tomatoes (398ml)
  • 4 Medium Jalapeños, diced
  • 1 Block Cream Cheese
  • 2 Cups Mexican Blend Cheese Shreds
  • 2 Tbs Sour Cream
  • 1/2 Lime, juiced
  • 2 Tbs Taco Seasoning
  • 1/4 Tsp salt, pepper, garlic powder, onion powder, paprika, oregano, each
  • 1 Cup Milk (2%)
  • 1 Tbs Flour
  • Tomatoes, to garnish
  • Diced Jalapeños, to garnish
  • Sliced Green Onions, to garnish
  • 1 Bag Tortilla Chips

Chorizo Sausage

For this recipe I strongly recommend using Spanish chorizo sausage. The chorizo is what gives this dip the perfect Mexican flavour profile. Chorizo sausage is already seasoned perfectly and that helps season the rest of the dip. 

If you don’t have chorizo sausage or dont prefer it, I would suggest using Italian sausage. However, I would NOT recommend using a polish or german sausage for this recipe because it does not have the same flavour profile that we are looking for in this Mexican inspired dip.

Bringing The Spice 🥵

This dip includes some spicy elements such as the jalepenos, chillies, and the chorizo itself. If you are not a fan of spicy or want to minimize the amount of spice I would recommend reducing the amount of jalapeños. Instead of adding 4 jalapeños, add 1 or 2 depending on your taste. Additionally, you can omit the can of chillies as well if you prefer. 

Method:

Step 1:

Remove the sausage from its casing. Cook the sausage ground until cooked and drain the fat. 

Step 2:

Add the rest of the ingredients to the same cast iron and bake until all melty. 

Step 3:

Mix up all the ingredients and add more cheese on top and broil until the cheese is melted. 

Step 4:

Garnish with onions and jalapeños and serve with tortilla chips. Enjoy 🙂

Ingredients:

  • 1 Cup Milk (2%)
  • 1 Tbs Flour
  • Tomatoes, to garnish
  • Diced Jalapeños, to garnish
  • Sliced Green Onions, to garnish
  • 1 Bag Tortilla Chips

Instructions:

  • Preheat oven to 400 degrees.
  • Firstly, remove the casing from the sausages. Slice down the sausage lengthwise and squeeze out the meat and discard the casing. Do this to all 4 of the sausages.

  • In a cast iron skillet pan on medium heat, add the olive oil and then the sausage ground. Cook until the sausage is browned and no pink bits appear. Then drain the fat from the sausage and put the sausage back into the skillet.

  • Next, add all of these ingredients to the same cast iron skillet that the sausage is in: onion, garlic, canned chilles, canned tomato, jalapeños, cream cheese, 1 cup of the shredded cheese (the other cup will be for on top), sour cream, lime juice, taco seasoning, spices, milk and flour.
    1 Cup Onion,, 4 Cloves Garlic,, 1 Can Chopped Green Chillies (127ml), 1 Can Diced Tomatoes (398ml), 4 Medium Jalapeños,, 1 Block Cream Cheese, 2 Cups Mexican Blend Cheese Shreds, 2 Tbs Sour Cream, 1/2 Lime,, 2 Tbs Taco Seasoning, 1/4 Tsp salt, pepper, garlic powder, onion powder, paprika, oregano,, 1 Cup Milk (2%), 1 Tbs Flour
  • Place the cast iron skillet in the preheated oven for about 20 minutes or until you see the cream cheese is melted. After 20 minutes remove from the oven and stir the dip together, incorporating all of the ingredients. Top with the remainder 1 cup of shredded cheese on top and bake for an additional 5 minutes under the broiler setting.
    2 Cups Mexican Blend Cheese Shreds
  • The dip should be bubbly around the edges and the cheese on top should be melted and gooey. Top with tomatoes, jalapeños, and green onion. This dip is best served warmed and with tortilla chips. Enjoy 🙂
