Brownie Baked Oats

This brownie baked oats is exactly what you have been looking for. I swear this taste exactly like a real fudgey brownie but is vegan, gluten free and healthy! I love to eat these oats for breakfast, snack and dessert and because this brownie baked oats is high and protein it is super satisfying! 

The Ingredients You Will Need…

  • 1 Cup Oats
  • 2 Tbs Cashew Butter
  • 2 Tbs Cocoa Powder
  • 1/4 Cup Light Brown Sugar
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Salt
  • 1 Tsp Baking Powder
  • 1/4 Cup Flaxmeal
  • 1 1/2 Cup Soy Milk
  • 1 Tbs Cooking Spray
  • 3 Tbs Chocolate Chips, to garnish
  • 2 Tbs Peanuts, to garnish

The Toppings

You can mix and match whatever toppings you like to add into the brownie baked oats. For this recipe I used chocolate chunks and peanuts. Some other really good toppings to add in while baking or on top could  include:

  • Walnuts
  • Pecans
  • Cherries
  • Strawberries 
  • Caramel Sauce
  • Pretzels
  • Marshmallows
  • Yogurt

 

Brownie Texture

For the brownie baked oats I baked them for 30 minutes @350 degrees. If you like your oats more soft and runny bake them for about 20 minutes but if you like your oats more “cakey” bake it for the full 30 minutes. 

Subsitutions

This recipe can be easily customizable.

Cashew butter ➡️ peanut butter, almond butter or no nut butter 

Soy milk ➡️  cow milk, almond milk, oat milk

 

Method

Step 1:

Add all of the ingredients into a high speed blender and blend until smooth. 

Step 2:

Pour the brownie batter mixture into greased ramekins. Top with chocolate chunks and peanuts. Bake for 20-3o minutes. 

Step 3:

And voilá! Fudgy, soft, chocolatey brownie baked oats. Enjoy! 🙂

Ingredients:

  • 1 Cup Oats

Instructions:

  • Preheat oven to 350 degrees.
  • In a blender add all of the ingredients except the chocolate chips and the peanuts. Blend until smooth.
    1 Cup Oats, 2 Tbs Cashew Butter, 2 Tbs Cocoa Powder, 1/4 Cup Light Brown Sugar, 1 Tsp Vanilla Extract, 1/2 Tsp Salt, 1 Tsp Baking Powder, 1/4 Cup Flaxmeal, 1 1/2 Cup Soy Milk
  • Spray the 2 baking ramekins with cooking spray so the oats don't stick. Add the brownie oat mixture to the ramekins. It should be filled about 1/2-3/4 of the way. This makes two moderate portions or three smaller portions.
    1 Tbs Cooking Spray
  • Sprinkle chocolate chips and peanuts over the top of the oats in the ramekins and place in a preheated 350 degree oven for 30 minutes. The oat bake is done when a knife comes out with only a small amount of crumbs on it. *
    3 Tbs Chocolate Chips,, 2 Tbs Peanuts,
  • Allow to cool slightly. Best served warm, enjoy 🙂

*If you desire a more sticky/runny texture of your baked oats only bake for 20 minutes and check the consistency of it by using a knife to poke the middle.
