Brownie Baked Oats

Ingredients
  

  • 1 Cup Oats
  • 2 Tbs Cashew Butter
  • 2 Tbs Cocoa Powder
  • 1/4 Cup Light Brown Sugar
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Salt
  • 1 Tsp Baking Powder
  • 1/4 Cup Flaxmeal
  • 1 1/2 Cup Soy Milk
  • 1 Tbs Cooking Spray
  • 3 Tbs Chocolate Chips, to garnish
  • 2 Tbs Peanuts, to garnish

Instructions
 

  • Preheat oven to 350 degrees.
  • In a blender add all of the ingredients except the chocolate chips and the peanuts. Blend until smooth.
    1 Cup Oats, 2 Tbs Cashew Butter, 2 Tbs Cocoa Powder, 1/4 Cup Light Brown Sugar, 1 Tsp Vanilla Extract, 1/2 Tsp Salt, 1 Tsp Baking Powder, 1/4 Cup Flaxmeal, 1 1/2 Cup Soy Milk
  • Spray the 2 baking ramekins with cooking spray so the oats don't stick. Add the brownie oat mixture to the ramekins. It should be filled about 1/2-3/4 of the way. This makes two moderate portions or three smaller portions.
    1 Tbs Cooking Spray
  • Sprinkle chocolate chips and peanuts over the top of the oats in the ramekins and place in a preheated 350 degree oven for 30 minutes. The oat bake is done when a knife comes out with only a small amount of crumbs on it. *
    3 Tbs Chocolate Chips,, 2 Tbs Peanuts,
  • Allow to cool slightly. Best served warm, enjoy :)

Notes

*If you desire a more sticky/runny texture of your baked oats only bake for 20 minutes and check the consistency of it by using a knife to poke the middle.
