Ingredients Needed

  • 1 1/2 lbs Carrots, peeled and sliced

  • 1 Tablespoon Avocado Oil

  • 3 Tablespoon Pure Honey

  • 2 Tablespoons Brown Sugar

  • 1 Tablespoon Fresh Thyme, minced

  • 1/2 Teaspoon: Onion Powder, Garlic Powder, Salt, Pepper, each

  • 3 Tablespoons Salted Butter, finely diced

  • Parsley, to garnish

How To Make Honey & Thyme Roasted Carrots

Preheat oven to 400 degrees F.

Line a baking sheet with parchment paper and set aside

Slice the carrots lengthwise in half. For larger carrots, slice lengthwise into quarters. All the carrots slices should generally be the same size.

Place the carrot slices on the baking sheet and drizzle the oil over top. Followed by the spices, honey, brown sugar and minced thyme. With clean hands massage the carrots with the ingredients and mix them around until evenly coated.

Next, finely dice the room temperature butter. Place the little diced pieces of butter on top of the carrots. Place the carrots in the oven and bake for 25 minutes, flipping halfway through.

Garnish the carrots with parsley and serve these Honey Roasted Carrots as a tasty side dish and enjoy! 🙂

Notes + Tips for Honey & Thyme Roasted Carrots

  • Use parchment paper to make these carrots! The honey and brown sugar that coat these carrots will caramelize giving these carrots that deliciously sweet taste but this can burn on a baking sheet if not line with parchment paper. Using parchment paper will avoid making a mess. 
  • Don’t over cook these carrots! I like a small bite in the middle of my carrots so I roasted my carrots for about 25 minutes. If you like your carrots more soft then roast them for 30 minutes or until they are your desired doneness. 
  • Add butter and flip carrots halfway through. Adding little cubes of butter of the carrots makes this recipe super easy! The heat in the oven will melt the butter so just flip the carrots halfway through to make sure they are coated evenly.
