These Mixed Berry Oatmeal Crumble Bars are crumbly and packed with berry flavour! Naturally plant based and refined sugar free these bars are filled with fresh berries, oats, a hint of cinnamon, and vanilla. They take just 10 minutes of prep and then go straight into the oven. So easy to make, and a crowd pleaser every time!

  • Use fresh or frozen berries! I used frozen berries for connivence but feel free to use fresh berries. I like to add blackberries, blueberries, strawberries and raspberries to these bars.

Ingredients Needed

Berry Chia Jam

  • 4 Cups Frozen Mixed Berries

  • 1/2 Cup Maple Syrup

  • 1 Lemon, juiced

  • 3 Tablespoons Chia Seeds

Oatmeal Crumble

  • 1 1/2 Cups Quick Oats

  • 1 1/2 Cups All Purpose Flour

  • 1/3 Cup Maple Syrup

  • 1/3 Cup Coconut Sugar

  • 1/2 Cup Coconut Oil

  • 1 1/2 Teaspoon Baking Powder

  • 1/2 Teaspoon Cinnamon

  • 1 Teaspoon Vanilla Extract

  • Pinch Salt

How To Make Mixed Berry Oatmeal Crumble Bars

Berry Chia Jam

In a medium pot add the frozen mixed berries and maple syrup. Bring the berries to a simmer and cook down for about 7 minutes. Use a fork to mash down berries, breaking down any large pieces.

Add in the chia seeds and lemon juice into the berries, stir the berry jam and cook for another 3 minutes. Take the jam off the heat after 3 minutes and set aside for now.

Oatmeal Crumble

Preheat oven to 350 degrees F.

In a mixing bowl add quick oats, flour, maple syrup, coconut sugar, coconut oil, baking powder, cinnamon, salt and vanilla extract. Use your fingers to “pinch” and mix the mixture together until the coconut oil is well incorporated and the oat crumble can be formed when pressed together in your hand.

Line a 9″x9″ pan with parchment paper then add half of the oat crumble mixture to the bottom. Use your fingers to press the crumble down into the pan creating one even layer. Bake this bottom crust for 8 minutes.

After 8 minutes of baking the base, add the berry chia jam on top. Crumble the remaining oatmeal crumble on top of the jam and bake these bars for 35-40 minutes until you see the top has a golden crust.

Allow the Berry Oatmeal Bars to cool completely in the fridge (2 hours). Use a sharp knife to cut the bars into pieces and enjoy! 🙂

Notes + Tips for Mixed Berry Oatmeal Crumble Bars

  • Berry Chia Jam: You can use regular store bought jam or you can make this berry chia jam. If you rather not use chia seeds, make the berry jam like normal but add 2 tablespoons cornstarch with 1 tablespoon of water (cornstarch slurry) and add that to the mixed berries in the last 3 minutes of cooking  to thicken the jam. 
  • Allow these bars to cool completely! Cool these Mixed Berry Oatmeal Crumble Bars in the fridge for at least 2 hours or ideally overnight. Once they are cooled, this will make them easier to cut up. 
  • Use parchment paper in your baking pan. This will make it much easier to pop out the bars once they are completely cooled. You can even cut the bars right on the parchment paper too.
