Ingredients Needed

  • 3/4 Cup Smooth Peanut Putter

  • 1/3 Cup Honey

  • 2 Cups Rolled Oats (NOT Quick Oats)

  • 1 Tablespoon Vanilla Extract

Chocolate Peanut Butter Topping

  • 1/4 Cup Smooth Peanut Butter, melted

  • 1 Cup Semi-Sweet Chocolate Chips, melted

  • 1 Tablespoon Coconut Oil

  • 1 Teaspoon Flakey Sea Salt (or Regular Salt), optional

How To Make No-Bake Chocolate Peanut Butter Oatmeal Bars

In a mixing bowl add smooth peanut butter, honey and vanilla extract. Use a whisk to combine these ingredients together until a smooth cohesive mixture is formed.

Next, add in the rolled oats to the peanut butter mixture and use a spoon or clean hands to combine the oats fully until the peanut butter mixture is fully incorporated.

Take the oatmeal mixture and press it into a parchment lined baking dish (I used a 9×9 square nonstick baking dish). Use the back of a spoon or your clean fingers to press down the mixture to create an even layer.

Chocolate Peanut Butter Topping

In a heat safe bowl melt the chocolate chips with coconut oil in the microwave in 3o second intervals until the chocolate is fully melted. Repeat the same step with the peanut butter (without any coconut oil) in a separate bowl.

Pour the melted chocolate over the oatmeal base and use a spoon to spread the melted chocolate all the way to the edges until it has created an even layer.

Swirl the melted peanut butter over the melted chocolate layer evenly. Use a butter knife to swirl the melted peanut butter and chocolate together until beautiful swirls are formed

Sprinkle over flaky or sea salt over the chocolate peanut butter oatmeal bars and then place in the fridge to chill for at least 2 hours.

After 2 hours of chilling, use a large sharp knife to cut the dessert into 12 even bars. Keep these bars in the fridge* to avoid the chocolate from melting and enjoy! 🙂

Notes + Tips for No-Bake Chocolate Peanut Butter Oatmeal Bars

  • Use smooth peanut butter to create this dessert. I am a HUGE fan of crunchy peanut butter, however, smooth peanut butter will work better for these bars. 
  • Rolled oats work best for these bars. Rolled oats will give these bars a chewy oatmeal base, quick oats will not give the same texture and turn out mushy.
  • I recommend using parchment paper and  lining a  non-stick baking dish; in order for the bars to easily release from the pan. Make sure to fully chill these bars so it makes them easier to cut up.
