Ingredients

  • 3/4 Cup Smooth Peanut Putter
  • 1/3 Cup Honey
  • 2 Cups Rolled Oats (NOT Quick Oats)
  • 1 Tablespoon Vanilla Extract

Chocolate Peanut Butter Topping

  • 1/4 Cup Smooth Peanut Butter, melted
  • 1 Cup Semi-Sweet Chocolate Chips, melted
  • 1 Tablespoon Coconut Oil
  • 1 Teaspoon Flakey Sea Salt (or Regular Salt), optional

Instructions

  • In a mixing bowl add smooth peanut butter, honey and vanilla extract. Use a whisk to combine these ingredients together until a smooth cohesive mixture is formed.
  • Next, add in the rolled oats to the peanut butter mixture and use a spoon or clean hands to combine the oats fully until the peanut butter mixture is fully incorporated.
  • Take the oatmeal mixture and press it into a parchment lined baking dish (I used a 9x9 square nonstick baking dish). Use the back of a spoon or your clean fingers to press down the mixture to create an even layer.

Chocolate Peanut Butter Topping

  • In a heat safe bowl melt the chocolate chips with coconut oil in the microwave in 3o second intervals until the chocolate is fully melted. Repeat the same step with the peanut butter (without any coconut oil) in a separate bowl.
  • Pour the melted chocolate over the oatmeal base and use a spoon to spread the melted chocolate all the way to the edges until it has created an even layer.
  • Swirl the melted peanut butter over the melted chocolate layer evenly. Use a butter knife to swirl the melted peanut butter and chocolate together until beautiful swirls are formed
  • Sprinkle over flaky or sea salt over the chocolate peanut butter oatmeal bars and then place in the fridge to chill for at least 2 hours.
  • After 2 hours of chilling, use a large sharp knife to cut the dessert into 12 even bars. Keep these bars in the fridge* to avoid the chocolate from melting and enjoy! :)
