In a bowl, season the ground beef with salt and pepper. Divide the meat into 4 equal portions and shape them into patties, about 1/2-inch thick. Set aside.
In a small bowl add the mayonnaise, dijon mustard, maple syrup and spices. Mix well and set aside for now.
Preheat your grill or stovetop grill pan to medium-high heat. Grill the Canadian bacon slices for about 2 minutes on each side, until slightly crispy. Brush each slice with maple syrup while grilling. Once done, transfer the bacon to a plate and set aside.

To assemble the burgers, spread a thin layer of the Dijon Maple Mayo on both halves of each toasted bun.
Place a cooked patty on the bottom bun. Top it with 2 slice of Canadian bacon, a charred onion round and cheese curds. Place a portion of cooked french fries on top of the cheese curds. Drizzle a spoonful of gravy over the fries. Place the top bun on the burger.
Repeat the process to assemble the remaining burgers.
