Date Snickers Bites are a healthy treat, featuring Medjool dates stuffed with creamy peanut butter, coated in dark chocolate and topped with a sprinkle of flaky sea salt. Perfect for a quick dessert or snack, these bites provide a healthier alternative to satisfy your sweet cravings.

- 16-20 Medjool Dates pitted
- ½ Cup Smooth Peanut Butter
- ¾ Cup Peanuts (or other nuts of choice)
- 1 Cup Chocolate Chips (I used dark chocolate chips)
- 1 Tablespoons Coconut Oil
- Flakey Sea Salt optional
Carefully slice each date lengthwise to create an opening. Remove the pit from each date.
16-20 Medjool Dates
Using a small spoon, fill each date with a generous amount of peanut butter. Press the sides together to close the dates.
½ Cup Smooth Peanut Butter
Delicately insert chopped peanuts (or other nuts of choice) into the date. Seal the dates by pressing the sides together. Place the dates on a parchment-lined tray.
¾ Cup Peanuts (or other nuts of choice)
In a microwave-safe bowl or using a double boiler, melt the dark chocolate and coconut oil together, stirring until smooth.
1 Cup Chocolate Chips (I used dark chocolate chips), 1 Tablespoons Coconut Oil
Dip each stuffed and nut-coated date into the melted chocolate, ensuring it is fully coated. Use a fork to lift the dates out of the chocolate, allowing any excess to drip off.
Immediately sprinkle a pinch of flaky sea salt over the chocolate-covered dates. This enhances the flavour.
Flakey Sea Salt
Place the chocolate-covered dates back on the parchment-lined tray and chill them in the refrigerator for at least 1 hour or until the chocolate hardens. Once the chocolate has set, they are ready to enjoy and should be kept in the fridge when not serving to ensure the chocolate doesn't melt. Enjoy! :)
