Oat Chocolate Chip Breakfast Cookie (Vegan)

- 1 Banana, Ripe
- 1 Cup Quick Oats
- 2 Tbs Flaxmeal
- 2 Tbs Peanut Butter
- 1/4 Cup Maple Syrup
- 1 Tsp Baking Powder
- 1/2 Tsp Vanilla Extract
- 2-3 Tbs Chocolate Chips
In a bowl add the ripe banana, oats, flaxmeal, peanut butter, maple syrup, baking powder, and vanilla. Mash the banana and mix the cookie mixture until a batter forms.
1 Banana,, 1 Cup Quick Oats, 2 Tbs Flaxmeal, 2 Tbs Peanut Butter, 1/4 Cup Maple Syrup, 1 Tsp Baking Powder, 1/2 Tsp Vanilla Extract
Divide the batter into two equal parts on a parchment lined baking tray. Spread the cookie mixture into a circle and top each cookie with chocolate chips. Bake the cookies for about 25 minutes at 380 degrees until the edges are golden brown. Enjoy :)
