Red Velvet Protein Donuts

Ingredients
  

  • 2 Cups Oat Flour
  • 1/2 Cup Chocolate Protein Powder
  • 2 Tbs Cocoa Powder
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 Tbs Vanilla
  • 1 Cup Greek Yogurt (Vanilla)
  • 2/3 Cup Milk*
  • 2 Eggs
  • 1/2 Cup Maple Syrup
  • 1-2 Tbs Red Food Dye
  • 1 Tbs Cooking Spray
  • 1/4 Cup Mini Chocolate Chips, to garnish
  • 1/4 Cup Raspberries, to garnish

Cream Cheese Drizzle

  • 1/2 Cup Greek Yogurt (Plain or Vanilla)
  • 1/2 Cup Cream Cheese, softened
  • 1 Tsp Vanilla Extract
  • 1/4 Cup Maple Syrup

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl mix the wet ingredients together: greek yogurt, milk, eggs, maple syrup, vanilla and red food dye. Whisk together until no lumps appear. Depending on the type of foo dye you use you may need to use more or less than 1-2 Tbs; add enough until the wet mixture is a bright red colour.
    1 Tbs Vanilla, 1 Cup Greek Yogurt (Vanilla), 2/3 Cup Milk*, 2 Eggs, 1/2 Cup Maple Syrup, 1-2 Tbs Red Food Dye
  • Add the dry ingredients into the wet ingredients bowl: oat flour, protein powder, cocoa powder, baking powder and salt. Mix well together.
    2 Cups Oat Flour, 1/2 Cup Chocolate Protein Powder, 2 Tbs Cocoa Powder, 1 Tsp Baking Powder, 1/2 Tsp Salt
  • Spray cooking spray on non-stick donut baking pans. Pour the donut batter into each donut mold about 1/2 to 3/4 full. This should make about 22 donuts (3" in diameter). Bake for 18-20 minutes or until a toothpick comes out clean.

  • Meanwhile the donuts bake, in a small bowl add softened cream cheese, greek yogurt, vanilla extract and maple syrup. Whisk well until no lumps appear.

  • Once the donuts are cooled it is time to decorate. Dip each donut into the cream cheese "frosting" then sprinkle with mini chocolate chips and chopped raspberries. You can serve them right away or they will last in the fridge for 5 days. Enjoy :)

*You can use whatever milk you have on hand or prefer for this recipe I used soy milk.
