Roasted Garlic Panini

Ingredients
  

  • 2 Slices Bread (of your choice)*
  • 1 Head Garlic
  • 1 Tbs Olive Oil
  • Pinch Salt
  • 2 Tbs Butter or Margarine
  • 2 Tbs Roasted Red Pepper
  • 1/3 Cup Mozzarella Cheese
  • 1/4 Cup Spinach
  • 2 Slices Tomato
  • 1/2 Cup Parmesan Cheese
  • 3-5 Olives, to garnish

Instructions
 

  • In a small baking ramekin add the head of garlic that has the top cut off. Drizzle with olive oil and a pinch of salt and roast in a 380 degree oven until golden brown this can take anywhere from 20-30 minutes.
    1 Head Garlic, 1 Tbs Olive Oil, Pinch Salt
  • Allow the head of roasted garlic to cool and once it is cool enough to handle, squeeze out the roasted garlic into the butter and add the roasted garlic oil too. Mix well until combined.
    2 Tbs Butter or Margarine
  • Spread the roasted garlic butter on each slice of bread.
    2 Slices Bread (of your choice)*
  • Heat up your panini press. Once it is ready to go, place half of the Parmesan cheese - 1/4 cup- directly on to the panini press and then place 1 slice of the bread, butter side down on top of the Parmesan cheese. Next add the mozzarella cheese, spinach, tomatoes, and roasted red pepper. Place the other slice of buttered bread on top, butter side facing upwards. Lastly, add the remainder 1/4 cup of Parmesan cheese on top of the bread. Shut the panini press and allow it to cook for 3-6 minutes until the Parmesan is nice and crispy on the bread.
    2 Tbs Roasted Red Pepper, 1/3 Cup Mozzarella Cheese, 1/4 Cup Spinach, 2 Slices Tomato, 1/2 Cup Parmesan Cheese
  • Remove the panini from the press and slice in half. Optionally, serve with olives. This sandwich is best served warm and with soup or salad. Enjoy :)
