Ingredients
  

  • 1/2 Cup Unsalted Butter, softened
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Packed Brown Sugar
  • 1 Large Egg
  • 1 Teaspoon Vanilla Extract
  • 1 1/2 Cups All-Purpose Flour
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 1 Cup Chocolate Chips (milk, dark, semi-sweet, or a combination)
  • 12 Graham Crackers
  • 12 Regular Sized Marshmallows
  • 24 Pieces of Chocolate (from a chocolate bar, I used milk chocolate)
  • Flaky sea salt (optional, for sprinkling on top)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and packed brown sugar until light and fluffy.
  • Add the large egg and vanilla extract to the bowl, and continue mixing until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together. Be careful not to over-mix.
  • Stir in the chocolate chips until evenly distributed throughout the dough.
  • Take a graham cracker and place it on the prepared baking sheet. On top of the graham cracker, place two pieces of chocolate, followed by a regular-sized marshmallow that has been cut in half.
  • Scoop about 1/4 cup of the cookie dough and slightly flatten it in your hands. Place it over the s'more stack on the baking sheet, covering it completely. Repeat this process for the remaining ingredients, making a total of 12 stuffed cookies. Do not place the cookies too close together and make sure to only add 6 cookies to each baking tray, giving them room to grow.
  • Bake the cookies in the preheated oven for about 10-12 minutes or until they are lightly golden brown. The marshmallows may puff up and spread slightly during baking.
  • Remove the baking sheet from the oven and optional sprinkle them with flaky sea salt. Allow the cookies to cool for a few minutes on the sheet before transferring them to a wire rack to cool completely.
  • Once cooled, these delicious S'mores Stuffed Cookies are ready to be enjoyed. The combination of gooey marshmallow, melted chocolate, and soft cookie dough creates a delightful treat reminiscent of classic s'mores.
