You have to try this roasted garlic panini if you are looking for a scrumptious lunch! What makes this sandwich so great is the roasted garlic that adds a swet rich flavour and the cheese that is crisped on the OUTSIDE of the bread giving it an extra cheesy bite. This panini is everything you are looking for, tasty, cheesy, and garlicky!
The Ingredients You Will Need…
2 Slices Bread (of your choice)*
1 Head Garlic
1 Tbs Olive Oil
Pinch Salt
2 Tbs Butter or Margarine
2 Tbs Roasted Red Pepper
1/3 Cup Mozzarella Cheese
1/4 Cup Spinach
2 Slices Tomato
1/2 Cup Parmesan Cheese
3-5 Olives, to garnish
The Roasted Garlic
This panini sandwhich calls for roasted garlic in the butter that goes onto the bread. I highly reccomend takinf the time to roast the garlic since it adds such a rich, nutty, depth of flavour. The roasting of the garlic will take abour 25-3o minutes, You could also do this in advance or use store bough roasted garlic.
The Bread of Your Choice
You may use whatver bread you have on hand or you prefer. For this recipe I used sourdough, I liked the sour taste it complimented the rest of the flavours. Some other good bread choices you could use:
Focaccia
Baguette
Ciabatta
White Loaf Bread
Rye Bread
Side note: you could even use gluten free bread if you are have a gluten allergy or prefer a gluten free chouce.
Inside Out Grilled Cheese + Panini Press
Cheese on the OUTSIDE?!
The special feature of this roasted garlic panini is the inside out aspect for this sandwich. Not only is there cheese inside of the sandwich there is cheese on the outside. When the cheese is grilled on the outside it crisps up and caramelizes which gives this sandwich an extra CRUNCH! If you have never tried this, this is your chance and your life will be improved, I promise LOL!
Panini Press
This recipe calls for a panini press to grill the sandwich. If you have a panini press go ahead and use that. Make sure it’s heated up before using. If you don’t have a panini press, no worries, just use a pan. If you have a cast iron, place that on top of the sandwich while its in the pan, creating a weight overtop of the sandwich which will flatten the sandwich and give it a panini style to it. Flip it over when golden brown and use the same method again with a weight over top.
Method:
Step 1:
Roast the garlic and then mash it up into a paste.
Step 2:
Add the roasted garlic to butter or margarine and spread over 2 slices of bread.
Step 3:
Assemble the sandwich on a preheated panini press and grille until crispy.
In a small baking ramekin add the head of garlic that has the top cut off. Drizzle with olive oil and a pinch of salt and roast in a 380 degree oven until golden brown this can take anywhere from 20-30 minutes.
1 Head Garlic, 1 Tbs Olive Oil, Pinch Salt
Allow the head of roasted garlic to cool and once it is cool enough to handle, squeeze out the roasted garlic into the butter and add the roasted garlic oil too. Mix well until combined.
2 Tbs Butter or Margarine
Spread the roasted garlic butter on each slice of bread.
2 Slices Bread (of your choice)*
Heat up your panini press. Once it is ready to go, place half of the Parmesan cheese - 1/4 cup- directly on to the panini press and then place 1 slice of the bread, butter side down on top of the Parmesan cheese. Next add the mozzarella cheese, spinach, tomatoes, and roasted red pepper. Place the other slice of buttered bread on top, butter side facing upwards. Lastly, add the remainder 1/4 cup of Parmesan cheese on top of the bread. Shut the panini press and allow it to cook for 3-6 minutes until the Parmesan is nice and crispy on the bread.
2 Tbs Roasted Red Pepper, 1/3 Cup Mozzarella Cheese, 1/4 Cup Spinach, 2 Slices Tomato, 1/2 Cup Parmesan Cheese
Remove the panini from the press and slice in half. Optionally, serve with olives. This sandwich is best served warm and with soup or salad. Enjoy 🙂
