Oat Chocolate Chip Breakfast Cookie (Vegan)

If you are tired of the same old breakfast foods, this oat chocolate chip breakfast cookie will satisfy your craving. This cookie is chewy, soft, and just the perfect amount of sweetness. The best part about this cookie is that its satisfying and its healthy! Batch make this recipefor a healthy to go breakfast!

Substitutions

Instead of using banana you can use apple sauce since it will also give a soft and moist texture. 

If you have a peanut allergy or rather not use peanut butter you could also use:

  • Almond Butter
  • Cashew Butter
  • Sunflower Butter

The Toppings

I used chocolate chips in this recipe but the toppings are endless. Some other topping ideas:

  • White Chocolate
  • Walnuts
  • Pecans
  • Cinnamon
  • Raspberries
  • Blueberries
  • Caramel 
  • Hazelnuts
  • Nutella 

Small, Medium or Large

For these oat chocolate chip breakfast cookies I divided my cookie batter into 2 large cookies. If you want smaller cookies you could divide the batter into 4 medium sized cookies.

Also, you can double, triple, or quadruple this recipe if you want to have more of them to prep for the week!

The Ingredients You Need…

  • 1 Banana, Ripe
  • 1 Cup Quick Oats
  • 2 Tbs Flaxmeal
  • 2 Tbs Peanut Butter
  • 1/4 Cup Maple Syrup
  • 1 Tsp Baking Powder
  • 1/2 Tsp Vanilla Extract
  • 2-3 Tbs Chocolate Chips

Method:

Step 1:

Mix all the cookie ingredients in a bowl, mash the banana and mix the batter together. 

Step 2:

Spread the cookie batter onto the parchment lined baking tray and top with chocolate chips. Bake until golden brown. 

Step 3:

Serve warm and enjoy! 🙂

Servings: 2 Cookies

Ingredients:

  • 1 Banana, Ripe
  • 1 Cup Quick Oats
  • 2 Tbs Flaxmeal
  • 2 Tbs Peanut Butter
  • 1/4 Cup Maple Syrup
  • 1 Tsp Baking Powder
  • 1/2 Tsp Vanilla Extract
  • 2-3 Tbs Chocolate Chips

Instructions:

  • In a bowl add the ripe banana, oats, flaxmeal, peanut butter, maple syrup, baking powder, and vanilla. Mash the banana and mix the cookie mixture until a batter forms.
    1 Banana,, 1 Cup Quick Oats, 2 Tbs Flaxmeal, 2 Tbs Peanut Butter, 1/4 Cup Maple Syrup, 1 Tsp Baking Powder, 1/2 Tsp Vanilla Extract
  • Divide the batter into two equal parts on a parchment lined baking tray. Spread the cookie mixture into a circle and top each cookie with chocolate chips. Bake the cookies for about 25 minutes at 380 degrees until the edges are golden brown. Enjoy 🙂
