These smash potatoes are so addicting! They are crispy on the outside and soft in the middle. I used everything bagel seasoning paired with herb and garlic cream cheese dip to give the potatoes a wholesome bagel feel. Believe me when I say you will want to eat the whole tray of these smash potatoes!
Baby Potaotes
For these smash potatoes I used baby potatoes. If you don’t have access to baby potatoes you could also use large russet potatoes. Before smashing them with a glass cut a small X on the top of each potato this will help the potato smash and not crumble into pieces.
Herb & Garlic Cream Dip
Dipping these smash potatoes in this herb and garlic cream dip is ADDICTING! If you have ever had an everything bagel with cream cheese you know that the cream cheese makes it so tasty, thats why these everything smash potatoes require this delicious dip. I used herb and garlic cream cheese as the base to give it a yummy flavour! Other dip ideas that you could use:
Ketchup
Green Goddess Dip
Avocado Crema/Guacamole
Honey Mustard
Spicy Mayo
The lsit goes on! The point is a good dip really take these potatoes to 10/10!

2 Pounds Baby Potatoes
3 Tbs Everything Bagel Seasoning
2 Tbs Salt
1/2 Cup Olive Oil
2 Tbs Chives or Green Onion, For Garnishing

3/4 Cup Plain Greek Yogurt
1/4 Tsp Salt, Garlic Powder, Onion Powder, Dried Dill, and Dried Parsley, Each

Heavy Bottom Glass or Jar

Ingredients:
2PoundsBaby Potatoes
3TbsEverything Bagel Seasoning
2TbsSalt
1/2CupOlive Oil
2TbsChives or Green Onion,For Garnishing
Herb and Garlic Cream Dip
1227gPack of Herb & Garlic Cream Cheese
3/4CupPlain Greek Yogurt
1/4TspSalt, Garlic Powder, Onion Powder, Dried Dill, and Dried Parsley,Each
1/2Lemon,Juiced
Instructions:
Preheat oven to 400 degrees.
In a large pot add the baby potatoes, pour over water until they are covered and add 2 Tbs of salt. Bring potatoes to a boil until fork tender (about 15 min).

Herb and Garlic Cream Dip
Meanwhile, in a medium bowl mix together the herb & garlic cream cheese, greek yogurt, spices and lemon juice. Mix until no lumps appear and set aside for now.

Once the potatoes are fork tender, drain them. Place the boiled potatoes on a lined parchment baking tray. Use a heavy bottom glass or jar to smash each potato. I used a medium sized mason jar with a heavy base to smash each potato flat.
next, brush olive oil on each side of each potato and then sprinkle each potato with the everything bagel seasoning. At this point you may add a sprinkle of salt to your potatoes if you fine necessary. Place the tray of potatoes in the oven and bake until super crispy this will take about 30-40 minutes.
1/2 Cup Olive Oil, 3 Tbs Everything Bagel Seasoning
Once the potatoes are nice and crispy along the edges they are done. Serve with the herb and garlic cream dip and garnish with chives or green onions. Enjoy! 🙂
