This spinach and artichoke dip is loaded with artichokes and spinach and tons of flavour! It is topped with extra cheese on top of course and served with your favourite chips, crackers, or veggies!

Frozen Spinach
The spinach is the one of the most important parts of the dip. I used frozen spinach. The ack that I bought came with 300g, 2 cubes of frozen spinach. I used one of these cubes which was 150g. Make sure to fully thaw the spinach fully before adding to the spinach dip mixture.
You don’t have to use frozen spinach , you could use fresh spinach if that is what you have. I would recommend using 2 cups of spinach and chopping it up well. In a non-stick pan lightly sauté the fresh chopped spinach until it is lightly wilted. Then the wilted spinach will be ready for use in the spinach dip.
Say Cheese!
This spinach & artichoke dip super creamy and that is from the 4 cheeses used: cream cheese, mozzarella cheese, Parmesan cheese, asiago cheese. You can use other cheeses that you have on hand or prefer but I do recommend using the cream cheese since it is the base of this dip.
I also added sour cream and mayonnaise to add to creaminess and to loosen the dip so it was “dipp-able”.

Drain the artichoke hearts from the can and chop up the artichoke hearts into small bite size pieces.
In a mixing bowl combine, the chopped artichokes, cream cheese, mayo, sour cream, thawed spinach, Parmesan cheese, asiago cheese, minced garlic, all spices and 1 cup of the mozzarella cheese. Save the other 1/2 cup for the top of the dip. Mix the ingredients together well until the cream cheese is fully incorporated.
In a baking dish, add the spinach dip mixture and spread out evenly. Top with the remainder 1/2 cup of mozzarella cheese. Place in the oven for 20-25 minutes until you see the cheese is bubbly and the top has a light golden brown colour from the melted cheese.
Allow the dip to cool for at least 10 minutes and then dig in with your favourite tortilla chips, crackers or veggies. Enjoy! 🙂
