This is one of those appetizers that look fancy but require minimal effort! The sweetness from the dates paired with the saltiness from the cheese works perfectly together. They are topped with crispy bacon, walnuts, rosemary, and honey. These stuffed dates can be made in advance and make the perfect party appetizer.
Dates
For this recipe i used Omani Dates. This is what was available to me. It doesn’t really matter what kind of dates you use but make sure they are pitted or that you take the time to remove the seed out of each one. Also, make sure to make a small slit down the date lengthwise so you are able to stuff the date with the goat cheese. Other type of dates you could use:
Halawy
Dayri
Medjool
Tassty Rabbi
Just choose a date that you enjoy or that is available to you!
Goat Cheese, Bacon & Walnuts
I used full fat goat cheese for this recipe. Note: make sure to leave the goat cheese out at room temperature for at least an hour so it is soft and easy to whip.
Thick- cut bacon will work best for this recipe. However, you can use thin slice bacon. If you end up using thin slice bacon you may need more than 6 pieces, I would recommend making 10 pieces if using thin slice bacon.
Walnuts give these stuffed dates a nice crunch and nuttiness. I LOVE walnuts they are my favourite nut. Other nuts you can use:
Pecans
Pistachios
Cashews
Just make sure that they are roughly chopped for topping!
Piping Bag or Plastic Bag
Stuffing the dates with goat cheese may just be the hardest part of this recipe (even though it’s actually not that hard). If you have a piping bag, use that to pipe the goat cheese. If you do not have a piping bag, place the goat cheese (once whipped and has thyme added to it) in the one of the corners on the plastic bag. Push the cheese to the corner and cut a small hole in the corner (less than 1/8inch big). Do not seal the bag at the top but twist it where the goat cheese ends and use that to stuff the dates.

Plastic Zip Lock Bag
Servings: 30Stuffed Dates
Ingredients:
30Pitted Dates
½CupGoat Cheese,Softened
6SlicesThick-Cut Bacon
2TbsMaple Syrup
1TbsFresh Thyme
1SprigFresh Rosemary
1/4CupWalnuts,Chopped
1-2TbsPure Honey
Instructions:
Start by preheating your oven to 400 degrees F.
Place your bacon on a baking tray and drizzle over maple syrup. Spread the maple syrup all over the bacon and then place the tray in the oven. Cook the bacon for about 20 minutes, flipping halfway through, until it is crispy.
6 Slices Thick-Cut Bacon, 2 Tbs Maple Syrup
While the bacon is cooking, in a bowl add the goat cheese. De-stem the thyme and add it to the goat cheese. Using a whisk, (or you can use a hand mixer if you have one) whip the goat cheese until it is light and fluffy.
½ Cup Goat Cheese,, 1 Tbs Fresh Thyme
Transfer your goat cheese to a plastic bag (or a piping bag if you have one) and cut one of the corners of the plastic bag off. The whole should be no bigger than 1/8 inch.
Once the bacon is crispy, cut it up into small pieces. Also, cut the walnuts up into small pieces off too.
1/4 Cup Walnuts,
Take each pitted date and use the plastic piping bag to stuff it with goat cheese. The pitted date should be cut vertically down the middle. Spread open the sides of the date and fill it with the goat cheese mixture. Repeat with all of the dates.
30 Pitted Dates
Once each date is filled with goat cheese, top with the chopped bacon and the chopped walnuts.
Garnish with rosemary and drizzle with honey. Enjoy! 🙂
