The best holiday appetizers are definitely these cranberry brie bites! They are salty from the creamy brie cheese and tart and sweet from the cranberry sauce. Using pre-made puff pastry makes this recipe even easier. It will only take you about 20 minutes to put together and you will be impressed with how these turn out!
The Dough
For this recipe I used pre-made puff pastry. The pack I bought came with 2 sheets and I used one of these two sheets. Each sheet was 200g. I used pre-made puff pastry to save time and to make this recipe extra easy!
Alternatively, you can use pre-made crescent roll dough. The pillsbury crescent roll that comes in a can would work perfectly. Cut it up into 24 equal squares and place it the mini muffin tin.
It is up to you and what you have available at your grocery store. Either way, using puff pastry or crescent dough, they will turn out delicious. Just make sure to put a big enough square of each dough on the bottom o hold the bite all together.
Cranberry Sauce or Cranberry Jelly?
These cranberry brie bites calls for cranberry sauce. I used my homemade 20-Minute Cranberry Sauce.
Instead of using cranberry sauce you can use cranberry jelly. Note:using cranberry sauce might make the sauce caramelize while cooking due to it being “looser” than jelly. There is nothing wrong wth this but when using jellied cranberries this will be avoided and stay more “solidified” when cooking.
Brie Cheese
Full fat brie cheese is what I recommend for this recipe. I know there are many different sizes and kinds of brie cheese but just try to choose one that is 250g and full fat. I cut the brie cheese into 24 equal 1/2 inch cubes.
Toppings
When serving these cranberry brie bites you can add some yummy toppings on top. If you are trying to make it look fancy for your guests I recommend using fresh rosemary sprigs. Other topping ideas:
Chopped Pecans
Chopped Walnuts
Fresh Thyme
Parsley
Honey
Fresh Cranberries
Use whatever speaks to you and what you have available!
Preparing and Storing the Bites
I highly recommend using a mini muffin tin to make these cranberry brie bites. It makes them the perfect size and because they are non-stick they easily pop out when done.
Once the bites have reached room temperature, you can store these in the fridge for up to 4 days.

Mini Muffin Tin
Servings: 24Bites
Ingredients:
Non-Stick Spray
200gPuff Pastry (1 Sheet)
250gBrie Cheese
1/2CupCranberry Sauce (24 Teaspoons)
1CupCranberries,Optional
Rosemary To Garnish,Optional
Chopped Pecans To Garnish,Optional
Instructions:
Spray the muffin tin with non-stick spray and preheat oven to 370 degrees F.
Non-Stick Spray
Cut up your puff pastry into 24 equal squares. Place puff pastry at the bottom of each muffin tin.
200g Puff Pastry (1 Sheet)
Cut up brie cheese into 24 equal cubes, about 1/2 inch big. Place brie cheese over top of each puff pastry.
250g Brie Cheese
Add 1 teaspoon of Vic Eat's Cranberry Sauce over top of each puff. Optionally, top each bite with fresh cranberries (I used 2 cranberries for each bite) to add some freshness.
1/2 Cup Cranberry Sauce (24 Teaspoons), 1 Cup Cranberries,
Bake until the edges are crispy and the dough is completely cooked. Allow the bites cool for about 20 minutes. Optionally, top with rosemary and pecans. Enjoy! 🙂
